    completely when they are overcooked so you should better watch your pot unless you want to prepare a puree In this appetizer I used eddo in two different consistencies as a puree blended with fresh creamy goat cheese and as tubes cooked al dente I rolled the tubes crosswise in beet powder to get a nice pattern and flavor combination Besides the beet powder I also baked a small beet and warmed it in reduced beet juice before assembling the dish Beet sauces are usually flavored with pomegranate juice syrup or molasses but this time I used a special pomegranate vinegar which balanced the sweetness of the beets much better If you can t find any eddos substitute them by Jerusalem artichokes Print Eddo with Beets and Shaved Hazelnut Prep Time 20 minutes Cook Time 1 hour Total Time 1 hour 10 minutes Yield 2 portions Ingredients 2 small red beets beet juice 2 tbsp pomegranate vinegar 250 g eddo or jerusalem artichoke 1 tiny clove garlic 1 tbsp fresh creamy goat cheese or créme fraiche 1 drop chili oil 4 small red beet or swiss chard leaves 2 hazelnuts few drops hazelnut or walnut oil salt butter Instructions For the red beet powder Wash the smaller red beet peel and grate very finely Squeeze the juice from the grated beet with your hands and reserve the liquid Spread the dry grated beet thinly on the glass plate of your microwave Microwave for 30 40 minutes at the lowest possible setting Keep an eye on the microwave to prevent the grated beet from getting burnt Remove the dried beet and sift through a fine sieve Reserve the beet powder covered at a dry place For the beet cubes Wash the other red beet and wrap in aluminium foil Bake in a 200 C 390 F hot oven for 1 hour Remove from the oven and chill to room temperature Unwrap the beet peel and cut into 0 5cm cubes Cover the cubes and set aside Replenish the reserved squeezed beet liquid with beet juice to get approximately 150 ml beet juice Transfer the beet juice with the pomegranate vinegar beet trimmings and a pinch of salt to a small pot Reduce at the low heat until the liquid starts to get syrupy For the eddo Wash the eddos or jerusalem artichokes and peel Cut 4cm long tubes from the eddos using an apple core remover Trim the ends Cook the eddo tubes according to their thickness for 4 6 minutes in boiling hot salted water Chill in ice water strain cover and reserve Finely chop the remaining eddo and transfer to a small pot with a tiny garlic clove and a generous pinch of salt Add enough water to just barely cover the eddo Cover and cook over low heat until the eddo is very tender Strain the cooking liquid Blend the cooked eddo with 1 tbsp creamy fresh goat cheese or use créme fraiche Press through a fine sieve

    pairings and techniques thinking about classic dishes and transforming them into new and more interesting forms is my biggest passion in cooking Sometimes I start meditating about a classic dish its ingredients the involved techniques and the possibilities behind them The ideas pop up and evolve during this creative process Some other times I keep thinking and enhancing distinct single ideas which I quite suddenly assemble into a new dish or a reinterpretation of a classic This time I combined several ideas and applied it to a Hungarian classic the lecho orignally lecsó Traditionally lecsó is a mix of onions long bell peppers and onions simmered similarly to a stew and served either immediately or stored in glasses for the forthcoming winter Sometimes lecsó is enhanced with garlic Hungarian sausage kolbász sweet paprika powder or lard Lecsó is usually served mixed with rice or eggs or it can be eaten simply with a few slices of bread I prefer the version with rice and very nontraditionally a lot of cinnamon which works especially well with chorizo like sausages You might ask now why to serve a lecsó in form of a sushi Well I figured out how to make endless variations of nori algae sheet substitutes the sheets you wrap your sushi into how the texture of tomatoes and peppers can resemble soft fish meat and how to replace the wasabi by another traditional Hungarian ingredient With the combination of the ideas described below serving a sushi with lecsó flavor surely will make sense to you as well So read on below for the birth story of the Lechosushi This is a preview of Lechosushi Read the full post This entry was posted in Appetizer Vegan Vegetarian and tagged appetizer bell pepper fruit leather garlic hungarian lecho lecsó letscho paprika rice starter sushi tomato vegan vegetable leather vegetarian on August 23 2012 by Robert Bell Pepper and Eggplant Terrine During the last month I finally managed to finish a huge project Some of you who might have seen me on Hungarian or German television might already know that for the last 5 years I was working as a research assistant at the local university here in Erlangen Next to teaching students about the beauty of computer science I also worked on my PhD thesis The final oral exam took place two weeks ago where I did pretty well and so I finally extended my name with a Dr Of course the exam was followed by celebrations lasting more than 3 days which seemed to be a little bit too much I spent the next few days in bed with a flu The first PhD celebration is traditionally held just after the final oral exam with my family and my fellows Since my colleagues know that I love cooking I had to come up with some original ideas for my menu Unfortunately I didn t have any time to cook on the day before my final exam so I searched for
